Summer Salad
This week we’ve been enjoying a heat wave in the south of England. Every meal we’ve eaten has been in the garden and we’ve been having lots of barbecues and salads. As we live near the beach this morning we were able to enjoy a swim before eating a picnic breakfast on the sand!
Last night we ate a really simple and delicious salad that we put together in minutes and was incredibly tasty. I can’t exactly call this a recipe, but here’s what we made…
Ingredients:
Parma ham,
Mozzarella cheese, sliced,
Rocket,
Cherry tomatoes,
Cantaloupe melon, chopped into small pieces
Cibatta bread, sliced & olive oil with balsamic vinegar dipping sauce
Method:
- Pile everything onto a plate & serve.
The melon is so refreshing and there are lots of different tastes to this salad, salty, sweet, creamy and peppery. Delicious and so easy!
Sounds lovely. Really proves that salads don’t have to be boring.
When it’s hot, it’s amazing how creative you can be with salad meals. Who wants to be stuck in a kitchen slaving over a boiling stove?
The most tasty light meal on a hot day. The melon really refreshes you. You’d be silly not to try it!
When it’s this hot I think you’re not as hungry so salad is just right! The melon was so refreshing.
