Thai Prawns
Serves 1
Ingredients:
1 tbsp oil
1 glove garlic crushed
1 tsp Thai green curry paste (add more if you like heat)
200ml coconut milk
1 pack of stir-fry vegetables
100g cooked prawns
Method:
- Heat oil in a wok or large frying pan on medium heat add garlic and curry paste, stir for a few moments, increase heat and add stir fry vegetables.
- Stir vegetables for approx 4-5 mins until it is all sizzling.
- Add coconut heat, wait for liquid to simmer then add prawns. Allow approx 2 mins for prawns to heat through.
- Serve immediately (cooked prawns left in a hot liquid will become tough).
Serving Suggestion:
Microwave rice

Choose an extra vegetable that your pack of stir-fry vegetables is lacking, maybe baby sweetcorn or mange-tout.
Ways to make this dish quicker:
Buy a green Thai curry sauce (I like Lloyd Grossman) and don’t bother with crushed garlic, a separate paste and coconut milk. Stir fry your vegetables then pour in the jar.
