Poached Haddock
Serves 4


300ml semi skimmed milk
2 sliced spring onions
2 bay leaves
1/2 tsp white pepper
4 pieces Haddock (smoked is best)


1. Pour milk into shallow frying pan or a large saucepan, place on a low heat.
2. Add spring onions, bay leaves and white pepper.
3. Submerge haddock in milk, cook on a low heat for 15/20mins

Serving Suggestion:

Mashed potato, green beans and roasted tomatoes. Pour hot milk over haddock when serving.

Ways to make this naughty but nice:

– Once fish is cooked remove to a hot plate and remove, bay leaves from milk then add around 250ml of crème fraiche to the milk. Stir and mixture should thicken, this can be used as a yummy sauce.
