It seems summer has finally arrived. We’ve been having really hot, beautiful sunny weather. Yesterday it was really hot and as an antidote to a family funeral we decided upon a barbecue. My husband loves to barbecue but we were both tired and wanted something quick to eat. We had barbecued Salmon. Why don’t you try this recipe on your barbecue this weekend? It is so quick and easy and this recipe serves two.
1 tbsp Sweet Chilli Sauce
Juice half a lime
2 Salmon Fillets
- Marinate salmon fillets in chilli sauce and lime for as long as possible (10-15 mins can be sufficient).
- Prepare barbecue to a medium heat.
- Pop salmon on barbecue skin side down.
- Cook fish slowly until it has become a light pink colour – time for this will vary with the heat of the barbecue (it took around 15-20 mins on our barbeque as the heat was low).
Serve with microwave rice, egg or rice noodles drizzled with soy sauce and a green salad.
If you don’t have a barbecue you can pick up a disposable one really cheap or like us you could spend around £15 and buy a mini gas barbecue at a camping shop. We bought our mini portable barbecue about four years ago now and it is still going strong. It is small enough to take out for the day and it is great at home if we need an extra place to cook barbecue food at a different temperature or to cook fish separately for vegetarians.
