I’ve just been reading how good beetroot is for us. I hadn’t realised that it is classed as a superfood! A few years ago I grew beetroot in my garden and enjoyed eating it with salad, now I want to grow more!
Beetroot is full of nutrients, it provides both carbohydrate and protein and has lots of vitamins and minerals. It contains potassium, magnesium, folic acid, iron, zinc, calcium, silica, beta-carotene and the list goes on.
Eating beetroot is recommended for a whole range of ailments. Its iron content aids anaemia, the folic acid content is good for expectant mums and its mineral silica helps reduce the risk of osteoporosis. Beetroot is lovely as part of a salad, here is an easy and interesting way to eat beetroot:
- 1 raw beetroot
- 2 tsp cream horseradish sauce
- Wash and peel the beetroot.
- Slice the beetroot into very thin slices.
- Put horseradish into a bowl and add beetroot, stir so that all beetroot gets some horseradish covering it.
- Lay beetroot onto a plate to serve.
Be careful with the beetroot as the liquid will stain clothes and good coverage with an apron will be needed.
